Avocado with eggs 390 calories (1 serving)

Ingredients

  • 1 tbsp olive oil
  • 2 eggs, lightly beaten
  • 2 Tbsp. low fat milk
  • 1/8 cup shredded Cheddar cheese
  • 1 Tbsp. sliced green onion
  • 1/8 cup chopped red bell pepper
  • 1/2 ripe, Avocado, seeded peeled and cubed

Preparation

  1. Heat oil in a large skillet over medium heat. Add green onion, and chopped red bell pepper and cook. Mix eggs, salt, Black pepper and milk and pour egg the mixture into skillet. Cook eggs until top is almost set.
  2. Top with avocado and shredded Cheddar cheese, fold over and serve immediately.

Egg-White With Feta, Spinach, And Mushrooms 200 calories (1 serving)

Ingredients

  • 1 tbsp olive oil
  • 2 egg whites
  • 1 egg
  • 1/2 cup chopped fresh spinach
  • 1/2 cup chopped button mushrooms
  • 1 oz feta cheese
  • 1 tsp fresh cilantro

Preparation

Preparation

  1. Whisk together egg and egg white. In a skillet add olive oil, cook tomato, artichoke, for 2 minutes over medium heat.
  2. Reduce heat to low, and add eggs. Cover, and cook 3 minutes, until eggs are firm.
  3. Top with feta.
