  • 3 oz turkey breast
  • 2 oz diced tomatoes
  • 1 tbsp dry quinoa
  • 1/2 tsp each thyme
  • 1/4 tsp garlic powder
  • 1/4 tsp chili powder (optional)
  • 1/2 cup low sodium vegetable broth
  • 1 cup water
  • Salt, black pepper, to taste

Preparation

  1. In a large pot or dutch oven, heat 1 tablespoon oil add onions, carrots and celery, saute for 2 minutes, add all the ingredients, bring to a boil, cover, turn heat to low and simmer for 20 to 30 minutes (you can add more water if needed),

  • 1 tsp olive oil

  • 1/3 cup canned white beans, rinsed

Preparation

  • 2 oz canned white beans
