4 overripe bananas (fresh or frozen - if frozen, drain some of the excess liquid once defrosted)

  • 1 egg
  • 1 1/2 cups oat bran
  • 1 tsp aluminum free baking powder
  • 1/2 tsp butter or ghee


  1. Mash bananas in a medium bowl
  2. Add eggs, oat bran and baking powder, allow to sit for 10 minutes
  3. Heat a large frying pan or griddle then melt butter or ghee
  4. Spoon batter into the heated ghee into desired pancake size, cook for 2-3 minutes per side until golden brown
