Ingredients

  • -Maida (All-purpose flour) 2 & ¾ Cups (350 gms)
  • -Corn flour ½ Cup (50 gms)
  • -Namak (Salt) 2 pinches
  • -Makhan (Butter) unsalted 1 Cup (250 gms) (Room temperature)
  • -Cheeni (Sugar) grinded 3/4 Cup (80 gms)
  • -Anday ki zardi (Egg yolks) large 3
  • -Vanilla essence ½ tbs
  • -Cocoa powder 4 tbs
  • -Strawberry jam
  • -Cooking chocolate
  • -Pista (Pistachio) & Badam (Almonds) chopped
  • -Chocolate ganache

Directions

  1. -In bowl,place sifter,add all-purpose flour,corn flour,salt and sift together,mix well and set aside.
  2. -In bowl,add butter and beat until fluffy.
  3. -Add sugar and mix with the help of the spatula then beat until well combined.
  4. -Add egg yolks and beat well.
  5. -Add vanilla essence and beat again.
  6. -Gradually add sifted flour mixture and mix gently until well combined.
  7. -Now divide the dough into two equal portions.
  8. -Cover yellow dough with cling film and refrigerate for 15-20 minutes.
  9. -Add cocoa powder in the second portion and mix until well combined.
  10. -Cover brown dough with cling film and refrigerate for 15-20 minutes.
  11. -Flatten the yellow dough and roll out with the help of rolling pin.
  12. -Cut into desired shapes with the help of the cookie cutter.
  13. -Make a slightly deep impression in the center of the dough and add jam.
  14. -For jam filling cookies,take a small dough and make a ball,make a hole in the center and slightly press it.
  15. -Now fill the center hole with the strawberry jam.
  16. -Take a small dough and make a ball,make a hole in the center,add cooking chocolate,make a ball again and add marks with the help of the fork.
  17. -Take a small dough and knead it with chopped pistachios & almonds,make a small ball again and press in cookie cutter to make a round shape,add pistachios and press it.
  18. -For Checker board cookies,take a brown dough,cut into small pieces and roll out lengthwise with the help of the hand.
  19. -Take a yellow dough,cut into small pieces and roll out lengthwise with the help of the hand.
  20. -Now place yellow and brown bars together and apply milk over them.
  21. -Place another yellow and brown bars alternatively to create a checker board effect,cover with cling film and gently press the bars together.
  22. -Let it refrigerate for 10-15 minutes.
  23. -Cut with the help of the knife into thick slices.
  24. -Take a brown dough and make a ball,place cling film and roll out with the help of rolling pin.
  25. -Cut into desired shapes with the help of the cookie cutter.
  26. -On baking tray,place butter paper and all prepared cookies.
  27. -Bake in preheated oven at 180 C for 10-12 minutes.
  28. -Remove baking tray from oven and let cookies cool for 2 minutes.
  29. -Transfer cookies to a wire rack to cool completely.
  30. -Pipe in chocolate ganache & serve.
