Bolognese Sauce Recipe - Beefy and Melt In Your Mouth Good!

This bolognese sauce recipe takes time, but is so worth it. The recipe is basically from Marcella Hazan, the queen of authentic Italian cuisine in my book. Ingredients below:

1.4 lbs ground beef (25/75)
1 1/4 cups chopped yellow onion
1 1/2 cups chopped carrots
1 1/2 cups chopped celery
1 1/2 cups whole milk
1 1/3 cups dry white wine
2 1/2 cups of chopped canned tomatoes - juice and all
salt and pepper to taste
1/4 teaspoon ground nutmeg
