Caramel Candies RECIPE


2 cups Heavy Cream
2 cups Sugar
1 cup Corn Syrup
3 oz. Butter
1 Vanilla Bean (or 1 tablespoon of Vanilla Extract)


Bring cream, sugar, corn syrup, and vanilla bean to a boil and cook on medium heat until temperature reaches 245°F (or until the color becomes a dark caramel color). Meanwhile grab an 8 or 9 inch pan and cover it with aluminum foil. Lightly grease the pan with pan spray. Continue mixing until caramelized. Remove from heat and gently add the butter. Mix until the butter melts completely then carefully pour it into the pan and place in the fridge overnight. Cut into small sized cubes by dipping a chef’s knife in hot water and gently cutting through the caramel mold. Plate and enjoy!
