Makes about 6 servings

Caramel Mousse

  • 250g dulce de leche
  • 240g whipping cream
  • 220ml milk
  • 2 egg yolks
  • 30g powder sugar
  • 1 tsp vanilla extract
  • 15g starch
  • 7g gelatin
  • 3 tbsp water

Crust

  • 80g cookie crust
  • 75g almonds
  • 75g sugar
  • 3 tbsp water

Swiss Meringue

  • 3 egg whites (100g)
  • 100g sugar
  • 1 tsp vanilla extract(5g)
