RECIPE: (Makes 4 servings)

Prep time: 15 minutes Marinating time: 15 - 30 minutes

1 deep casserole dish (at least 2” deep)
1-1/2 cups of mixed greens or kale
1 cup arugula
1 avocado
3 Kumato tomatoes (I love the flavour of these tomatoes but you can use any tomatoe that you have on hand)
1 whole shallot (shallots have a milder flavour that doesn’t overpower this salad, but you could also try a red onion, white onions won’t work..they are too strong)
1/4 cup of cilantro
Juice of 1 lemon
1 tbsp Extra Virgin Olive Oil
Himalayan pink salt to taste
Black Pepper to taste

THE STEPS:

Step 1: Wash all of your veggies really well!

Step 2: Mince the shallots into small pieces and place into a small bowl. Squeeze the juice over the shallots until they are submerged.
Add a bit of salt, pepper and the olive oil and mix together. Set it aside to marinate and this is essentially your salad dressing.

Step 3: Slice the tomatoes into ¼ thick pieces.

Step 4: Cut the avocado into small 1/2” pieces.

Step 5: Pick the cilantro leaves off of the stems.

Step 6: Now its time to assemble everything in your casserole dish. We’re going to do this in layers.
Start with the mixed greens, then the arugula,
tomatoe, avocado, cilantro, sprinkle some the shallots to your liking,
and add 1 tbsp of the olive oil/lemon juice/shallot mixture. Then add
salt and pepper to taste.
Repeat this step again, and layer until you get to the top of the dish.
Set aside to marinate for 15 - 30 minutes max and serve immediately!

The reason why I’m doing this in layers, is because all of the ingredients will have an equal amount of dressing. You won’t bruise any of the leaves and everything will stay crisp. No soggy salads please!

To serve this fresh and fabulous salad, you can use a cake knife to cut through the layers and dish it out onto your plate!
