Chinese Potato Salad (土豆丝)

This refreshing potato salad is light and simple.

INGREDIENTS (4 servings):

  • - 1 carrot
  • - 2 red potatoes
  • - 1 green pepper
  • - 1 tsp. sugar
  • - 1 tsp. apple cider vinegar
  • - 1 tsp. light soy sauce
  • - dash of salt
  • - sesame oil
  • - toasted black sesame seeds


  1.  peel your carrot and red potatoes and chop carrot into strips
  2.  chop pepper into strips as well, avoiding the seeds (which are spicy, unless you're using a bell pepper)
  3.  the potato can be shredded using a mandolin, or simply chopped
  4.  rinse and soak potatoes for several minutes to get rid of the starches
  5.  for the sour yet sweet dressing, combine sugar, apple cider vinegar, light soy sauce, salt, and a little bit of sesame oil
  6.  cook the potatoes by boiling them in water. soften the carrots by boiling them in the water as well
  7.  after several minutes, remove from water and place in serving dish
  8.  top with pepper stripes, dressing, and toasted black sesame seeds
  9.  serve and enjoy!
