- 4 1/2 lb Angus Corned Beef Flat brushed with Gravy Master &
rubbed with 2 tbsp each: ground coriander seed, ground
peppercorns & ground mustard seed.
- cooked w/Kingsford Original & smoked w/a hickory chunk indirect
using the Slow 'N Sear till the meat reached a temp of 165-170 deg F.
- then wrap in plastic food grade wrap and tin foil and cook to an
internal temp of 195 - 200 deg F.
- cook time around 5-6 hrs total on the Weber Performer.
- let rest about 30-60 mins and thinly slice.
- serve on fresh rye bread with or without mustard.
