Creamy Gnocchi Pesto Sauce

Marring two great Italian recipes together (fresh gnocchi & fresh pesto), here is a quick and delicious recipe for a pesto sauce you can use with gnocchi or pasta. The heavy cream and generous amount of Parmesan cheese make it thick and creamy - just like in that Italian restaurant you love you much.

1/4 cup Olive oil
1/2 Onion
1 clove Garlic
200 gr Chopped champignon mushrooms
4 tbsp. Fresh pesto (recipe:
1 kg Fresh homemade Gnocchi (recipe:
2 cups of Heavy cream (38% fat)
1/2 cup White wine
1/2 tsp. Table salt
1/4 tsp. Black pepper
1/2 cup Freshly grated Parmesan cheese

1. Dice onion & mushrooms
2. Slice garlic
3. Add onion to pan and sweat until light golden.
4. Add garlic and sweat for a short time taking care not to burn the it
5. Add mushrooms and sweat
6. Add salt & pepper
7. Add pesto
8. Add fresh gnocchis and braze in the pan
9. Add cream
10. Add white wine
11. Add Parmesan cheese
12. Stir thoroughly.
13. Serve steaming hot
