Snickerdoodle Chia Pudding

  • 1 can coconut milk
  • 5 tbsp chia seeds
  • 1 tsp cinnamon
  • topped with grain-free granola and blueberries

Sweet Potato Toast breakfast sandwich

  • 2 slices sweet potato toast
  • 1 egg
  • lettuce
  • 2 tsp almond based cream cheese

Sweet potato toasts

  • slice 1/4 inch thick
  1. 400F for 20 minutes then store in fridge or freeze.

Raspberry Muffins with a swirl

  • ¼ cup coconut flour
  • ¼ teaspoon baking powder
  • 3 large eggs
  • 2 tbsp maple syrup
  • 3 tbsp coconut oil, melted
  • 2 tbsp almond milk
  • 1 tsp pure vanilla extract
  • 1/2 cup raspberries (fresh or frozen)
  • 1 tsp almond butter in each muffin 
  1. Bake at 350F for 15-18 minutes or until golden

Pesto Egg Bowl

  • 3 cups kale
  • 1 tbsp pesto
  • 2 poached eggs
  • half avocado

To poach an egg:

  1. add 1 tbsp vinegar to water and bring to boil
  2. crack an egg into the water and cook for 7 minutes.
