Makes 2

20g softened butter, to grease ramekins
20g caster sugar, to coat ramekins

25g cocoa powder, sifted
120g 70% chocolate
5 egg whites
20g caster sugar

For the pastry cream:
175ml milk
40g caster sugar
2 medium egg yolks
15g plain flour
