Here’s my new favorite vegan pasta recipe + what I ate on my trip to Italy. Pizza, pasta and all the vegan ice cream I could find - a quick vegan northern Italy food guide some might say!

Ingredients

Best Vegan Tomato Sauce

  • ~ 250 g cherry tomatoes (~8.8oz)
  • ~ 900g big tomatoes (6-8 big toms) (~32 oz)
  • 2 cloves garlic
  • 1 small carrot
  • 1 big onion or 2-3 small ones
  • 1 tbsp tomato purée
  • 1 tbsp olive oil
  • 1 bay leaf
  • a handful of fresh thyme and or oregano
  • 1 cup vegetable broth (250ml)
  • cornstarch slurry (1 tbsp cornstarch + 2 tbsp water)
  • salt, pepper to taste
  • sweetener to taste, if tomatoes aren’t sweet enough add about 1-2 tsp of sugar/agave ...
  • 200 - 350g pasta of choice (7-10.6oz→ serves 2-3

Lazy Leftover Pesto Pasta all eyeballed amounts:

  • 2 servings cooked pasta
  • juice of the ½ lemon
  • 3 tbsp green pesto, vegan
  • 3 tbsp red pesto, vegan
  • ¼ cup non-dairy milk (60ml)
  • salt, pepper to taste
  • a handful of fresh rosemary, remove before serving
