- 4 pangasius fish fillets (about 800g) or any white fish fillet
- oil for deep frying
- ground black pepper
- 1-1/3 cup all purpose flour
- 1 tsp salt or to taste
- 1 tsp paprika powder
- 1 tsp garlic powder
- 1/4 tsp baking powder
- 1 tbsp cornstarch
- 2 tbsp white rice vinegar
- 1/2 tsp yellow egg food colouring (optional)
- 1-1/4 cup (+/-) water
In a big bowl mix together flour, salt, paprika powder, garlic powder, baking powder, cornstarch, rice vinegar, food colouring. Then add 1 cup of water. Mix well. If too thick gradually add 1/4 cup(more or less) water continue mixing until you obtain a thick smooth batter.
Let batter rest for 10 minutes.
Mean while season fish fillet (both side) with freshly ground black pepper. Sprinkle a bit of salt if desired.
Then one by one gently dip fillet in the prepared batter.
Deep fry in hot oil (120C-250F) over medium-high heat for 3-5 minutes or until crisp and golden brown. Fry fish fillet one at a time and do not over crowd the pan otherwise you will end up with soggy fish fillet (the fish will soak up all the oil).
Remove from oil and transfer on a paper towel to remove excess oil.
Repeat same process with the rest of the fillet.
Serve with chips, ketchup (or preferred dipping sauce) and fresh lime!
