Fish Brine & Marinade

1 Tablespoon salt
1 tablespoon sugar
1 tablespoon lemon juice
1 cup water + water to cover fish

In a small bowl mix salt, sugar, lemon juice and add water. Stir until salt and sugar dissolve. Place up to 1.5 LBs of fish in a small container with a lid. Pour brine over fish, pour water over until fish is covered. Put on the lid and place in the refrigerator for at least one hour and up to 6 hours.

Season fish with your choice of seasonings and cook as you desire. I’ve seasoned with jerk seasoning and smoked my fish for 2 hours in an electric smoker.

Teriyaki Marinade

1 Tablespoon brown sugar (packed)
1 Teaspoon fresh ginger
1/4 -1/2 cup of Soy Sauce
1/2 to 1 Tablespoon Red pepper flakes

Mix all ingredients. Place fish in a container with a cover and pour marinade over fish. Make sure to coat the entire piece of fish. Place the lid and refrigerate for 1-6 hours. Make sure to redistribute the marinade over the fish every hour or so.
