Green Salad and Dressing

This is called a green salad for tradition’s sake, but actually it’s much more interesting than that. It features mint, onion, romaine lettuce, and an alchemy of dressings to make it far more than the sum of its parts.


  • 2 Romaine lettuce
  • 1 American lettuce
  • 3 Tomatoes
  • 2 Cucumber
  • 1 Red onion
  • 1 Pack of mint
  • 3 Pitta breads, oven dry and broken into pieces (use wholemeal pittas for healthier alternative)
  • 20 g White sesame
  • 10 g Black sesame
  • 25 g Za’atar
  • Juice of 1 lime
  • Olive oil to taste
  • A couple of tbps of Hellmann’s Real Mayonnaise
  • Salt to taste
  • Black pepper to taste


  1. Wash and dry the leaves from the lettuces, then rip them with your hands into irregular pieces, and set aside.
  2. Cut the tomatoes, cucumber and onions into medium cubes and place into a large salad bowl.
  3. Combine the salad with all the ingredients using your hands, including the sesames and Za’atar.
  4. Then season with olive oil, lime and salt and stir in the mayo to bind everything together.

Serves six (as a side)
