BANANA BLUEBERRY PROTEIN MUFFINS

  • 4 large ripe bananas
  • 3 eggs OR equivalent egg replacer
  • 1 tablespoon coconut oil, melted
  • Around 1 teaspoon vanilla extract
  • 3/4 cup (ish) apple sauce (ground zucchini would be good too- it just helps keep it super moist)
  • 1/4 cup (ish) Hemp hearts
  • Blueberries
  • 1/2 cup almond flour
  • 1/2 cup chickpea flour
  • 3 Tablespoons (ish) sprouted flax seed powder
  • 1 teaspoon (ish) cinnamon
  • 1 teaspoon (ish) nutmeg
  • ¾ teaspoon baking soda
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • Walnuts to top (pumpkin seeds are awesome tooooo)



Mix dry and wet ingredients separately before combining. Add in hemp hearts and blueberries in the mixing together stage
Top with walnuts

Bake at 350 for 18-20 min or until the tops are browned and a toothpick (or knife) inserted into the middle of the muffin comes out clean (keep an eye on them!)

CAULIFLOWER RICE

(Eyeball whatever amount you want to prep- I usually do one whole Cauliflower minimum)

Cauliflower
Red Cabbage
Brussel Sprouts
Red Pepper (Capsicum)
Cilantro/ Coriander

Coconut oil (for the pan)

Cook for 5-10 minutes on medium/ high heat with the lid on (time is depending on how much you have in your pan- Keep an eye on it. You can't really undercook it, it would just be crunchier)

Take lid off, turn down to medium heat
Add in spices- I used:

Vegetable salt
Black Pepper
Turmeric
Basil
Garam Masala

Once combined, I turn the stove off and let it cool in the pan before transferring to a reusable container to store.
