I LOVE FALL. I love everything about it, especially the warm comfort food. Here are some of my favorite recipes for the fall season.

- - - - T H E R E C I P E S - - - -

[butternut squash pasta]
1 butternut squash
1/4 cup onion
1 or 2 garlic cloves [depends on how garlicy you want it!]
sprinkle salt & pepper
oregano, basil & thyme to taste
[nutmeg is really good too!]

[pumpkin cinnamon muffins]
-- 1 & 1/2 cups whole wheat flour
-- 1 & 1/2 teaspoons baking powder
-- 1/2 teaspoon salt
-- 2 1/2 teaspoons cinnamon [or pumpkin spice!!]
-- 1/4 cup vegan spread
-- 1/2 cup coconut sugar
-- 1 flax egg [1 tablespoon ground flax, 3 tbsp water]
-- 1 tsp vanilla
-- 1/2 cup pumpkin puree
-- 1/2 cup almond milk [or any dairy-free milk]

[grain bowl mustard/tahini sauce]
-- 2 tbsp rice vinegar
-- 2 tsp coconut sugar
-- 2 tbsp mustard or tahini

[chocolate latte]
1 & 1/2 tbsp cocoa
1 tbsp coconut sugar
handful vegan chocolate chips
1 tsp instant coffee
1/4 cup almond milk

[melted marshmallow!]
2 tsp icing sugar
3 tbsp coconut cream
^ [taste this and sweeten to your liking]
