In this video I present Homemade Pumpkin Pancakes From Scratch Recipe. It's a healthy (healthier) option than traditional pancake recipe. This pancakes are so delicious and easy to prepare and can be used as a Thanksgiving breakfast idea. I show you step by step how to make homemade pancakes using healthy and nutritious pumpkin puree and great blend of spices.
To follow this recipe you will need ingredients listed below. It is enough to make 27 pancakes.

Ingredients needed:
3 eggs
1/4 cup sugar
1/2 cup flour
2 cups pumpkin puree
1 tsp cinnamon
1/2 cup coconut oil or cooking oil
1/2 tsp allspice
pinch of salt
1/2 tsp baking powder
powdered sugar for dusting

Cooking instructions:
In a bowl beat 3 eggs with sugar. Next add flour, cinnamon, allspice, salt, baking powder and pumpkin puree. Combine those ingredients well. When pancake batter is mixed well you can warm up oil on the pan. I used coconut oil for my pancakes but if you are not a fan of it you can substitute it with your chose of cooking oil. Measure each pancake with a cup. I used little bit less than 1/4 cup for each pancake. I fried 5 pancakes at once on the 11 inch pan. Make sure that you leave extra space between your pancakes so they will not create one huge pancake. Flip them over when you see that they are golden-brown. The second side will fry faster so keep an eye on them to prevent burning. Now important cooking advice: transfer pumpkin pancakes to the plate with paper towel when you see that they are ready. Paper towel will absorb excess oil so the pancakes will not be soaking in it. Before frying second round take out all small leftover particles from the pan so they will not burn into a charcoal and make your kitchen and pancakes smelly. You can pour more batter on the pan after you remove those particles. You can serve those pancakes on the plate or as I did in my video on a big cutting board. This way everybody can grab as many pumpkin pancakes as they want. Just before serving I garnish pancakes with powdered sugar. It will give extra sweetness and also looks beautiful.
