This is a typical Chinese soup that we all grew up with. It contains meat such as pork or chicken with an assortment of veggies. We call it the ABC soup but I wonder what it really stands for so I checked around and found a variety of explanations;

1. It represents vitamins A, B & C from the vegetables.
2. It's as easy to make as ABC.
3. It's popular with American Born Chinese (ABC).
4. "A" for Ang Mo Kio, "B" for Bah Kut (Pork ribs) and "C" for carrots in a Chinese dialect.

It appears that no one really knows the exact answer but whatever it is, there's no doubt that this is a healthy, delicious soup which is kid-friendly, good for the soul and the cold.

Do you know that you can just turn the leftover soup into a smooth and creamy chicken soup? I made a big pot 2 weeks ago and had some leftovers. So the next day, I just blended all the ingredients (of course minus the chicken bones) and soup in a blender and voila.. it became this smooth, creamy and delicious Western soup which I had with some toasted keto bread. That's why I call this a 2 in 1 chicken soup - Chinese and Western chicken soup in one pot!

Typically, the vegetable ingredients include potatoes, corn, onions, carrots, and tomatoes. But I have made it low carb by replacing the potato with radish or daikon and omitted the corn. Besides the regular onions, tomatoes, and carrots, I added other nutritious vegetables such as leeks and celery. I used a free-range chicken but you can use any chicken or pork too. To cook the soup, I used a crockpot slow cooker to cook this soup which took about 4 hours but you can also cook it over a stovetop for 2 hours or until all ingredients are tender.

It is ridiculously easy to make this soup which is not only wholesome but nutritious and tasty. So let's get started!


  • 1 free-range chicken
  • 2 cups tomatoes
  • 2 cups radish or daikon
  • 1 large yellow onion
  • 2 cups leeks
  • 2 cups celery
  • 2 cups carrots
  • Sufficient water
  • Chicken stock (optional)
  • Salt & Pepper to taste


For clear soup;

  1. Cut all vegetables into chunks.
  2. Cut chicken into 4 portions. Blanch in boiling water for a while to remove scums.
  3. Place all ingredients in a slow cooker.
  4. Add sufficient water and chicken stock (if using) to cover all the ingredients.
  5. Cover and cook at high heat for 4 hours.
  6. After 2 hours, add salt and black pepper. Stir to mix well.
  7. Cover and cook for another 2 hours.
  8. Adjust taste accordingly.
  9. Dish up and serve hot.

For smooth and creamy soup;

  1. Remove chicken bones.
  2. Pour all ingredients and soup into a blender.
  3. Blend until smooth and creamy.
  4. Pour into a pan and cook over medium heat for a while.
  5. Adjust taste accordingly.
  6. Dish up and serve hot.
