How to make a Tortilla Casserole (Easy and Delicious)

The original recipe is from my Betty Crocker cookbook. I've modified it to suit ingredients available in Australia and our preferences. I've included the original recipe below my version. I must say, my version was delicious, we loved it!



  • 500g beef mince (1 lb. ground beef)
  • 1 medium onion, chopped (about half a cup)
  • 1 jar (226g) Mexican salsa
  • 1 can condensed Cream of Chicken soup
  • 1/2 a red capsicum (60g), diced small
  • 4 flour tortillas cut in 1" strips
  • 2 cups (226g) shredded cheese
  • Sour cream and sliced black olives for serving


  1. Preheat oven to 180 degrees C. Cook beef and onion until browned, drain. Put half the salsa in the bottom of an ungreased 8x8x2 square baking dish. Mix remaining salsa, soup, and capsicum together.
  2. Layer half the tortilla strips over salsa in baking dish. Top with half the beef mixture, half the soup mixture, and half the cheese. Repeat layers.
  3. Bake uncovered at 180 C for about 30 minutes until hot and bubbly. Let sit a few minutes, then cut into 4 serves. Top with sour cream and sliced black olives.


Original Recipe

Follow same method using ingredients below, except add the sour cream to the soup mixture. Preheat oven to 350 degrees F.

  • 1 pound ground beef
  • 1 medium onion, chopped (about half a cup)
  • 1 jar (8 oz) green Mexican salsa
  • 1/2 cup dairy sour cream
  • 1 can (10-3/4 oz) condensed Cream of Chicken soup
  • 1 jar (2 oz) sliced pimentos, drained
  • 6 corn tortillas cut in 1" strips
  • 2 cups (8 oz) shredded cheese
