This recipe is the perfect way to get a crispy crust and tender flaky fish on the inside.


  • 2 lbs fish fillets of your choice
  • (flounder, trout or catfish are good choices)
  • 3 large eggs
  • 1/2 cup cold water

Fish Fry Mix

  • 1/2 cup all purpose flour
  • 2 1/2 cup yellow corn meal
  • 2 to 3 tsp lemon pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt (or to your taste)
  • 1 1/2 tsp cajun seasoning (I use Tony Chachere)


  1. inse fish in cold water (if store bought or prepackaged frozen)
  2. use flat bottomed dishes to dredge fish
  3. fry oil should be between 350 to 375 degrees Fahrenheit
  4. cook fish around 1 to 1 1/2 minutes on each side or until it starts to float and is golden brown
