How to make German Nougat.

German Nougat or what is called Nougat in Germany is Gianduja, a mass made from Nuts, Sugar and chocolate. A smooth delicious paste, melting in your mouth.

What you need:
1 part Nuts (Hazel Nuts or Almonds)
1 part icing sugar
1/2 part Chocolate.
It depends on how your past should be. You can take dark chocolate, mild chocolate or white chocolate.
For a thick or even hard paste take darker chocolate.
It depends also how much chocolate you take.
You should start with half the amount of chocolate as nuts.

And you need a professional blender.

Roast the nuts and remove the skin (with almonds remove skin before roasting).
Put the nuts in the blender and blend them for some seconds. Add sugar and keep blending until smooth.
It is quite warm now.
Add the the chocolate step by step. and keep mixing.
It should not get to hot, otherwise the chocolate begins to curdle.

And ready.
What to do with it?
Bake a cake, bake cookies, make an ice cream (Baccio) or make some pralines.
