How to Make Homemade Mayonnaise

It is very easy to make homemade mayonnaise. You can make it in no time. If you are concerned about the raw egg, you can buy pasteurized eggs at most larger grocery stores.

You will need
1 egg yolk
1 teaspoon of Dijon mustard
1/4 teaspoon vinegar
1 teaspoon lemon juice
1 cup of vegetable oil
salt and pepper to taste

Start by placing egg yolk, Dijon mustard, vinegar, and lemon juice into a bowl. Slowly begin to stream in the vegetable oil. Stream in only a small amount to start. Beat mixture with a whisk. The mixture will begin to emulsify. Add in a little vegetable oil in at a time, whisk in, and when the oil is fully incorporated add additional vegetable oil

Add oil until it has been fully incorporated. Season with salt and pepper to your desire. This is ready for a sandwich, or to use in a recipe.
