Ingredients:
- 1 soba packet per person
- 3 carrot
- 3 mushrooms
- 1 cup spinach
- 1 fresh onion
- tofu
- 50 ml tamari (GF soy sauce)
- Parsley
- 1 1/2 liter water
Method:
- Pour the water into a pan.
- Add all the ingredients: carrot & mushrooms cut in medium size chunks
- Cook for about 3-4 minutes.
- Add now the soba and cook for about 3-5 minutes.
- Add now the spinach and tofu.
- Turn off the heat and now add the miso paste and tamari sauce.
- Top with parsley or fresh onion before serving
