Ingredients:

  • 1 soba packet per person
  • 3 carrot
  • 3 mushrooms
  • 1 cup spinach
  • 1 fresh onion
  • tofu
  • 50 ml tamari (GF soy sauce)
  • Parsley
  • 1 1/2 liter water

Method:

  1. Pour the water into a pan.
  2. Add all the ingredients: carrot & mushrooms cut in medium size chunks
  3. Cook for about 3-4 minutes.
  4. Add now the soba and cook for about 3-5 minutes.
  5. Add now the spinach and tofu.
  6. Turn off the heat and now add the miso paste and tamari sauce.
  7. Top with parsley or fresh onion before serving
