2 Cups Milk
Lamb Sausages or any sausage of your choice
1/2 Tsp Pepper and 3 Tbs Salt

1 - Peel and cut potatoes into cubes and place in a pot and add 2 Tbs of salt. Boil for 20 mins.(Poke knife through to ensure potatoes are soft) Drain the water, add 1/3 Cup Butter
1/3 Cup Sour Cream and 1/3 Cup Milk.Mash it all up, then add 1/2 Tsp pepper and 1/2 Cup Mozzarella. Combine it all together.

2 - Slice onion rings, add 2 Tbs olive oil into a hot pan add a pinch of salt and fry until golden brown (can add 3 Tbs of water to help with caramelization)

3 - Dice Speck into cubes and fry until golden brown, (just use the same pan you used for browning your onions and use it for frying the sausage too, it's great for soaking all those flavors) Add your sausages and fry them until browned.

4 - Cut sausage down the center and then add your mash, sprinkle mozzarella cheese, speck and fried onions and top with more mozzarella.(Left over fried onions to use for the white sauce) place sausage boats on to a baking tray and into the oven for 15 Mins (350 F 180 C).

5 - White sauce: 1 Tbs corn flour into a cup and add 1 cup of milk and stir until is all combined, have extra milk a side to ensure the white sauce thickens. Melt butter in a medium saucepan over medium-high heat until foaming. Add the corn flour mixed with milk. Cook, stirring, for 1 to 2 minutes or until bubbling. Remove from heat. Slowly add milk, whisking constantly, until mixture is smooth. Return to heat. Cook, stirring with a wooden spoon, for 10 to 12 minutes or until sauce comes to the boil, thickens and coats the back of a wooden spoon or whisk. Add the left over fried onions. Add Tbs pepper, 1 Tbs soy sauce & 1 Tbs mustard, combined into the sauce.
Pour the white sauce onto a plate and place the sausage boat on top. Enjoy, this is a delicious recipe, kids will enjoy this one.
