This Ice Cream is the Old School recipe. It's a tried and true method to make great ice cream. It take a bit more time but the results are well worth it.
Recipe
1 Cup - Heavy Cream
3 Cups - Half & Half
1 Teaspoon - Pure Vanilla
1 Pinch of Salt
8 Egg Yolks
3/4 Cup of Sugar
An Ice Cream Maker
Mix the cream and half & half in a medium sauce pan. Heat until just before boiling then remove from heat. Mix egg yolks in a bowl until pale and well mixed. Slowly mix in sugar to the egg yolks. Stir until you get ribbons. Slowly add the cream to the yolk mixture, stirring constantly. Mix in vanilla and salt and place back over medium heat. Stir the mixture regularly until it reaches 170 degrees. After it has reached this temperature remove from heat and leave to cool for at least 40 minutes at room temperature. From this point place in the fridge overnight or until it reached 40 degrees. Once complete add the mixture to your ice cream maker.
