How to make your own Chocolate Nougat (aka Mars Bar) - Cupcake Central

WHY Chocolate Nougat? I always wondered how you could make your own Mars Bar Chocolate Nougat. After watching an amazing video of how they make Mars Bar and Snickers bars in a factory I was determined to try it myself. Of course you can make this and use this as a cupcake filling too!

- 2 egg whites
- ¼ teaspoon cream of tartar
- 300g caster sugar
- 1 cup Karo light corn syrup
- 125ml water
- 100g melted milk chocolate
- 2 tablespoons cocoa powder (Try Callebaut Belgian Cocoa)

1. Separate egg yolk and egg whites
2. Beat the egg whites with the whisk attachment and add cream of tartar. Beat until soft peaks form.
3. Meanwhile add the sugar, corn syrup, and water to a saucepan and cook on med-high heat (turn to high heat if you're using an induction plate like us).
4. Cook the sugar syrup until it reaches the soft crack stage, 270°F. Pour about a teaspoon of the sugar syrup into the egg whites and beat until incorporated. Add in another teaspoon and beat some more. Continue doing this until all the sugar syrup is incorporated. Add in the chocolate and the cocoa powder, and beat until the bowl is slightly warmer than room temperature, about three minutes. Pour into an oiled pan. Spread the nougat into an even layer. Let it set for an hour, add caramel and chocolate drizzle. Maybe some peanuts if you want to turn it into a snickers bar. And cut it up in squares.
