Such a great vegetable stock to use in soups, sauces, rice, and casseroles. Make two jars and give one away as a gift.

Parsley - large bunch, cut in smaller bunch pieces

10 seconds / speed 7

Celery - 7 oz (200 g) cut in chunks
Carrots - 9 oz (250 g) cut in chunks
Zucchini - 5.5 oz (150 g) cut in chunks
Mushrooms - 2 oz (50 g) cut in chunks
Onions - 3.5 oz (100 g) cut in chunks

10 seconds / speed 7

scrape sides of mixing bowl down

Tomatoes - 3.5 oz (100 g) cut in chunks
Thyme - a handful of fresh leaves only
Basil - a handful of fresh leaves
Sage - a handful of fresh leaves
Sea Salt - 4 oz (120 g) (don't reduce or it doesn't keep long)
Garlic - 1 toe
Olive Oil - 1 TBSP
1 Bay Leaf

don't fill too full
it can be done in batches

10 seconds / speed 7

scrape sides of mixing bowl down

10 seconds / speed 7

replace measuring cup with simmering basket (to prevent splattering of hot liquid)

35 min / varoma / speed 2

fills two 15 oz jars

great for soups, sauces, risottos, rice dishes, casseroles, chili and in all recipes needing bouillon cubes
