Protein pancake ingredients:
- 1 banana
- 2 tbsp of rolled oats
- ½ cup of soy milk/ milk of choice
- 1 scoop of protein powder
- 2 eggs
For cooking the pancakes:
- Coconut oil
- A frying pan
- A spatula
Protein pancake method:
- Place all ingredients in the blender and blend until smooth
- Place your frying pan on a medium heat and put a small amount of coconut oil I it and allow it to melt
- Once the oil has melted add a some of the mixture to the pan and cook till its covered in bubbles then flip the pancake and cook for 1-2 minutes on the other side and place it aside and repeat the process until all the mixture has been used
Stewed fruit ingredients:
- 1 tbsp of chia seeds
- Agave syrup to taste
- 1 green apple chopped up
- ½ frozen raspberries
- ½ cup of water
For cooking the stewed fruit:
A small pot
Stewed fruit method:
- Place the pot on a low heat and add the water, apple, chia seeds and agave syrup and stir
- Cook for 10 minutes/ until the fruit has softened and add the raspberries and stir gently
- Cook for another 5 minutes and its ready!
Assembling:
- Stack all the pancakes on plate and top it off with the stewed fruit/ a topping of your choice
- Drizzle with some more agave syrup and enjoy!
