Grandma's tasty zucchini relish recipe from my off grid homestead
Cucumber/Zucchini Relish
Starry watched her great grandmother Klemasheski can wonderful foods in her old fashion water bath caner! One of them has been in the family for years. Kinda a Starry original. A little bit of this and a little bit of that!
Grandma said "WE need to use all of it, the cucumber and the zuks, why separate them and make one relish, throw it in the pot!!"

This makes a great relish that grandma and Starry just doesnt use for hotdogs! YUCK that would be a waste. Starry puts her relish in all kinds of original dishes. WATCH more and visit her food blog for tips !


CUKES ZUCCHINI Pick what you have and shred it (12 cups)

~Pick and Cut
Red Onion (Or Yellow) 1 c
~Mixed Pepers (1 C or more)

Now Pour KOSHAR Salt over bowl of veggies..cover and place in fridge for 1 hour

In a stockpot, combine the
3/4 C sugar,
1 TBLS Turmeric
5 Cups White And Apple Cider Vinegar (mix the two)
1 TBLS Celery Flakes

Now Rinse your shredded veggies
SQUEEZE out water
And put in stock pot on burner
Bring to a boil then simmer for 30 minutes
Should be thickened a bit

Laddle into HOT JARS
Water Bath ...CHECK your altitude.. I do 10 minutes
