I’ve been failed so many times in the past, and finally found the recipe of a perfect Tonkatsu that it was a secret method of a restaurant in Japan.

No undercook, no overcook, crispy AF and juicy AF.

Ingredients 

(for 2p)

  • Pork neck (or loin) 300 ~ 360 g
  • Pointed white cabbage 1/4 (180g)
  • Eggs 2
  • Flour
  • Panko (breadcrumbs)
  • Mayonnaise 2 TB
  • Ketchup 2 TB
  • Miso 2 ts
  • Vegetable oil
  • Tonkatsu sauce
  • Toasted sesame seeds
  • Lemon (optional)

- For brine -

  • Water 450 ml
  • Sake 50 ml
  • Salt 15 ml
  • Ginger 15 g
