RECIPES:

  • Creamy Pumpkin Pasta:
  • 2 cups uncooked pasta
  • chopped mushrooms, onion, peppers
  • 1 cup non dairy milk
  • 2 tbsp flour
  • 1/3 cup pumpkin puree
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/2 tsp garam masala (or a cinnamon/nutmeg mix)
  • 1/4 cup nutritional yeast
  • 1/4 - 1/2 cup liquid (I used vegetable stock)
  • 1 tbsp maple syrup
  • salt/pepper to taste

Cinnamon Waffles:

  • 1 cup flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • 1 cup non dairy milk
  • 1 tbsp pumpkin puree
  • 1 tbsp oil
  • 1 tsp lemon juice or vinegar
  • 1/2 tsp cinnamon
